SPRING IS TRYING TO SPRING…

It’s March 20, the first day of spring here in Rhode Island. Spring is trying to spring, but let’s talk a bit about winter first… In a past post from 2022, I wrote it was the saddest winter ever in my 44 years of life. Well, Guess WHAT? The Winter of 2026 was the MOST MAGICAL winter in quite some time. I say in quite some time because I lived in NH for many many moons, and I saw good winters there. When I say ‘good’ winters, I mean SNOW. Lots of it, and this winter was the snowiest I have ever seen here in Rhode Island in my 47 years of life. Rhode Island broke the historic Blizzard of ’78 record this year by a few inches.

The snow is now gone, and the tulips and daffodils are coming up, and the water table is HIGH. I took a walk with my Aunt the other day to Stepstone Falls. That’s its official name, but I have always called it just “Stepping Stones”. My dad and his family of 13 would picnic and hike the area weekly during the 60’s and 70’s. It is one of my favorite places in Rhode Island. I just needed to hear some waterfalls, and that place doesn’t disappoint. We spent Natalie’s Covid birthday party there, it was lovely… It meets up with the Ben Utter Trail, which is also a favorite.

It was a bit chilly, and all I could think about was soup. I wasn’t sure what kind of soup, something comforting and delicious. When I got to my car, I googled soup recipes, and my girl Ree Drummond’s 30 soup recipe post came up. Nothing really struck my fancy until I read CHICKEN TORTELLINI SOUP. The idea of cheesy tortellini in a cozy chicken soup was the answer. SO here’s the link to the recipe I may or may not have fully followed…Of course, I didn’t follow completely. I CAN NOT follow directions; it’s just not part of my brain function. But I did, however, make a DELICIOUS COZY soup, and it was just what I was dreaming about during my walk.
