I picked up this cookbook the other day. I loved the cover, imagine cooking in a kitchen like that. I think I would really love it. Would you? Turns out Westchester County is in NY, just outside of NYC. While I was perusing the cookbook and saw an entry from someone from SCARSDALE! I immediately laughed and thought about my dear friend RACHEL. If your a friends watcher you have heard the argument between Rachel and Ross and moving to Scarsdale. I honestly thought scarsdale was a place made up for the show but it’s NOT So that is why I am posting this recipe; soley because it’s from Scarsdale and well it looked good too! Tandoori Chicken
Tandoori Chicken is chicken baked with spiced yogurt. There is 2 parts to the recipe. First one being Cucumber Raita
Cucumber Raita Submitted by Snigdha Mukerji from you guessed it/ SCARSDALE 😃
- 1/2 cup yogurt
- 1/2 cup sour cream
- salt and pepper to taste
- 1 cucumber grated
- chinese parsley or chinese parsley for garnish
Mix first three ingredients. Add cucumber. Garnish with parsley and chill for a bit
Tandoori
- 1 cup of plain yogurt
- 3 cloves of garlic, crushed
- 2 tsps of fresh grated ginger
- 2 TBSP lime juice
- 1/2 tsp cayenne pepper
- 2/12-3 lbs frying chicken, quartered or just grab some thighs and breasts or just thighs or whatever you wish.
- Onion rings, thinly sliced for garnish
- wedges of lime for garnish

If you don’t want to just go to the store and buy some things and legs 😆
Combine the first 6 ingredients. Add the chicken to this mixture and marinate at least 2-4 hrs or overnight in the fridge. Put chicken on greased wire rack in baking pan or a sheet pan. Roast 40-60 minutes at 400 degrees, occasionaly basting with the left-over marinade until tender or you can cook these outside on your grill. Garnish with onion rings and wedges of lime. Serve with cucumber raita and Nan (Pita Bread). YUM.
Best- Ever Rice pudding.

- 1 cup of long grain rice
- 2 quarts of milk
- 4 eggs
- 1 1/4 cups sugar
- 1 pint heavy cream
- 4 tsps of vanilla extract
- 2 TBSP fresh lemon juice
- cinnamon
- light cream
In top of double boiler, cook rice in milk for 1 hour or until thick and rice is soft. DO NOT BOIL. I mixing bowl, beat together next 5 ingredients until blended, add 1/2 cup of rice to this mixture. Then return to the pot with remaining rice. Cook 10 minutes , stirring until thickened. Place in serving dish to cool. Sprinkle with cinnamon and chill well. Serve with light Cream
I have to be honest, I have never eaten rice pudding nor have I ever made it but it was the only dessert recipe from scarsdale. Ed said I would probably like it so hope you do too..
