My Garden Avocado Dip and Dressing!
I wanted to share with you a new recipe I came up with yesterday, Garden Avocado Dip and/or Dressing! WOW! It’s so good. I was reading a fun, bell ringing, grocery store flyer when I came across their article about a dip they sell. The ingredients were so simple oil, avocado, herbs, and vinegar. I had all that good stuff at home so the minute I walked in the door from Natalie’s horse back riding lesson I whipped up my own version of Avocado Dip. Unfortunately we do not get to grow avocado’s here in the northeast so that part was grocery store bought:) Here is how I did it.
How it’s done!
1. I went right out to my garden and gathered chives, parsley, basil, and sage. You can add whatever herbs you wish
2. I took out my very old but well loved and used magic bullet, (you could use anything that blends well) and the avocado in the fridge I have had a for awhile.
You know when you are cutting into an avocado and you are thinking “I hope it’s good, I hope it’s good” well lucky for me it was perfect!
3. I stuck everything in the blender and blended quite well. It was thick so I found myself adding some almond milk to thin and then eventually even some water. Don’t forget your salt and pepper for your Garden Avocado dip.
Last night while falling asleep I found myself dreaming up new ways to mix this beautiful dip. Oh and the color of this dip is incredible. It’s this beautiful pale green like a celadon glaze for pottery! ENJOY! This Garden Avocado was light, creamy, and simple. Last night I made it to put over my salad greens i picked from my garden! I love eating out of my garden. I also dipped some carrots and orange peppers in it while I was getting dinner together. Add more herbs for more of a tang it’s so versatile, get creative!
1 Avocado
1/3 Olive Oil
4-5 TbSP Balsamic Vineager
3 TBSP Pecans (can leave out if desired)
5Tbsp Fresh Chives
2TBSP Fresh Parsley
2 Fresh Sage Leaves
Squeeze half a lemon in too (definitely helps the avocado not turn brown)
Salt & Pepper
Almond Milk and/or water to thin to your desired consistency
